Morphed Tortilla Soup

I decided to make Tortilla soup yesterday. Tasty, warm, filling--a great Sunday meal. As I was making it, it kind of morphed into Mexican Chicken Jambalaya Burritos. Hope you give it a try and enjoy it as much as we did.

Here is what I did:
Tortilla
soup (my normal recipe)
Saute together in a large stock pot:

  • some chicken (I cut up about 3 Chicken breasts in to bite size chunks before sauteing)
  • cloves of garlic
  • 1 large onion
After chicken is fully cooked and somewhat browned, add in the following:
  • chicken broth (32 onces)
  • Mexican stewed tomatoes (I put it in the Vita-Mix to de-chunk)
  • Chopped Carrots (I do about a handful of baby carrots)
  • 2 Ribs Chopped Celery
  • 1 Can kidney beans (drained & Rinsed)
  • 3 or 4 shakes Oregano
  • 3 or 4 shakes Adobo
  • salt & pepper to taste
Usually I would let this simmer until the carrots are tender and eat it with con chips--BUT---
This is where it morphed:
I added in about 3/4 cup of rice. I let is simmer until the rice was soft. It so happened that all of the broth was absorbed-- so then I made some homemade corn tortillas and we ate it like burritos. We added Sour Cream and Cheese. My girl's ate it with corn chips.

This was the best tortilla soup I have had-- my morph turned in to a success. I hope you enjoy it.
