Potato Soup

This is one of our family favorites. This is a very simple yet yummy soup for a nice rainy or cold day.

Potato Soup
Put the following in a big pot and barely cover with water. Cover with a lid and bring to a boil-- until potatoes are soft.

  • several diced potatoes

  • cubed ham or raw bacon

  • diced onion

  • diced carrots

  • 2 chicken bullion cubes (Knorr brand from MEX isle)

Put the following into the blender; blend and pour into pan-- (do not drain the water from pan)

  • 2 cups of Milk

  • 5 Tbsp of Corn Starch

  • 1/2 cube of Melted butter

  • 1/2 tsp of Italian seasoning

  • 1/4 tsp of Garlic salt

  • Salt & Pepper to taste

Let simmer until thickened-- Enjoy with hot GF bread.
