Gluten-ed

So yea, most mornings I let the girl's fix their own breakfast. I know, you may think that I am not fulfilling my responsibilities as a mom, BUT I need them to learn to organize their time, learn to work in the kitchen and have some independence AND this works for me. I will make up some waffle batter (both GF and Gluten-ous) and leave it in the fridge so that they can fix themselves a waffle. Well-- all I had in the fridge was the GLUTENed batter-- and I had not told them that. So yesterday, Ry got up and fixed her and Ty a waffle. When I came downstairs and asked what they had eaten, and they told me-- I went into panic mode. Ty reacts to a crumb of bread and here she ate a WHOLE waffle. She got a headache, spastic, and forgetful...It is amazing howit effects her when she has gluten...what a blessing it is to know that all we have to do to help her feel good is avoid certain foods.

What's for Dinner?

Tonight we had Mandarin Chicken and Ham fried rice. It was yummy. I have a great tempura batter recipe for the Chicken-- instead of flour, I used Pamela's GF Pancake/Baking Mix. It worked like a champ!

So tonight we have Activity Day's here at our house. I will be teaching the girl's how to make pumpkin Pie-- But I am going to make the crust GF. Wish me luck. (hehe I did buy a GF crust mix-Brand Name: KinnickKinnick)
Another gal (leader) made some pies that we will eat for dessert after, but the one I am making will be GF so that my famaily can enjoy it later after they leave...
