Herbed Focaccia Bread

Herbed Focaccia Bread

3 1/2 cups flour (I use Pamela's baking mix to make it GF)
1 tsp sugar
1 tsp salt
1 pkg (1Tbsp) Yeast
1 c Hot water (tap hot-- not boiling)
2 Tbsp oil
1 egg
3-4 T olive oil
Garlic Salt
basil or rosemary or thyme (I like basil)

Heat oven to 170 degrees-- when preheated, turn off the oven and then do the following: In the mixer-- combine 1 cup flour, sugar, salt, and yeast; mix well. Combine water & 2 Tbsp of oil; Add warm liquid to the flour mixture. combine thoroughly, add in egg. beat at medium speed for 2 full minutes; Change to bread hook and add in the remaining flour-- until dough pulls away from sides and is smooth and elastic-- approximately 5 minutes. Cover the bowl and let rest for 5 minutes.

Dump dough on greased cookie sheet-- roll out into a 12 inch circle; cover loosely with plastic wrap and a cloth towel. Place into warm oven and let rise for about 30 minutes.

Remove from oven. Change Temp to 400. uncover dough-- with your finger or with the end of a wooden spoon, make holes in the bread about every inch; drizzle olive oil onto bread-- I then smear it around with my hands to make sure it covers every bit of the bread. Sprinkle with Garlic Salt and herb of choice. Bake for 22 minutes. Remove from oven and enjoy hot with your spaghetti or whatever.
