Mandarin Chicken & Sweet / Sour Sauce

Mandarin 'Chicken & Sweet / Sour Sauce:

  • 4 or so Chicken Breasts-- Boiled until thoroughly cooked-- after cooked-- cut into strips-- 1/2 inch wide or so dip into the following batter:
Batter:
  • 1/2 cup Flour (I user GF Pancake mix)
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp sugar
  • 1/3 c cold water
  • 1/2 c cornstarch
  • 1 tsp baking soda
  • 1 tsp salt
Mix all together and dip chicken in it. Heat oil in skillet to HOT and put chicken in one piece at a time to fry-- Fry until browned on all sides. The following sauces are my families favorites:
Sweet & Sour:
  • 1 cup tomato sauce
  • 1/2 c diced onions
  • 1/2 c crushed pineapple
  • 1 tsp ginger
  • 1/4 c vinegar
  • salt
  • 1 1/3 c sugar
  • 1 T GF soy sauce
  • 1/4 c cold water mixed with 2 T corn starch
Cook all together in a sauce pan until thickened.
honey mustard:
  • 1 cup Mayo
  • Yellow Mustard--- to make it nicely yellow-ed
  • Honey-- enough to make it sweet
mix it all up until creamy
