As promised...

Cafe Rio Rice:

  • 3 cups Rice
  • 4 t Chicken Bouillon
  • 1/2 bunch Cilantro
  • 1 can Green Chiles
  • 1/2 t Salt
  • 1 T Butter
  • 1/2 Onion
Chop Cilantro, Green Chiles, & onion in Food Processor. Bring water to a boil, add in all ingredients--cover and simmer 30 minutes. (wonder how this would work in a Rice Cooker??)

Cafe Rio Dressing:
  • 1 Buttermilk ranch dressing Pkg (prepared)
  • 2 Tomatillos
  • 1/2 bunch Cilantro
  • 1 clove garlic
  • 1 limes worth of juice
  • 1 jalipino
chop in food processor and add to the dressing.

Cafe Rio Chicken:
  • 1 small bottle of Kraft Italian Dressing
  • 1 T Chili Powder
  • 1 T Cumin
  • 3 Cloves minced Garlic
  • 5 lbs Chicken Breast
Cook altogether in a crock pot for 4 hours, shred chicken and cook another hour.

I ate it as a salad with lettuce, salsa, cheese and black beans on Tortilla Chips. Others ate it wrapped in a Flour Tortilla. I want to try it next time in a corn tortilla. I will just say this-- Yummmmmeee!
